Prawn & Avocado Quesadillas

Quesadillas are a great breakfast, but filled up with cheese and bacon they’re a bit like pizza for breakfast. Not that there’s anything wrong with pizza for breakfast, but this healthy version is a nice alternative, cleverly using humous to stick things together.

I made the tortillas yesterday with wholemeal flour, so today it’s just piling cooked prawns, avocado, spring onions, garlic, chilli, seasoning, etc on them. Oh and ‘baby’ spinach from the garden, which as you can see is no longer ‘baby’ as it’s getting out of control! So it’s going in all our food for the foreseeable future…

Then fry up on a low heat, so things heat up before the tortillas crisp up too much.

Nom nom nom. Very filling with all the protein in there, and very tasty with the onions, chilli, garlic and humous.
