Not much to say here really, it’s a BBC good food recipe that’s not that dissimilar from the Cook’s Illustrated ones I’ve done in the past.
It was supposed to be with gruyère cheese, but Sainsbury’s didn’t have any so they delivered gouda instead, so that’s what I used.
Potatoes get par-boiled.. which is a massive faff. Cook’s Illustrated’s method of microwaving them is much easier. And every else get’s mise en place.
The veg and pancetta get fried up, and then mixed with potatoes, cheese and eggs. Then it all gets fried up so it has nice crispy brown bits
Served, always for our brunches, with avocado and almond thingy.
