Parmesan Baked Popcorn Shrimp

The shrimp in this recipe from Rasa Malaysia don’t look like the popcorn shrimp I recognise from American bars, but they do look nice. And they look pretty easy to make, which makes them ideal for an easy Freezer Friday meal.

All you do is mix grated parmesan with breadcrumbs (sourdough ones in my case), then do the flour/egg/breadcrumb thing and bake at 200C fan. The recipe says for six minutes, but for our larger prawns I’m going to assume it’ll need at least 10 minutes. And 10 minutes is plenty of time to stir-fry up some veg to serve.

Stirfry veg… so-so. Not as crispy as I’d like, but at least it was all veg: low cal and lots healthful nutrients.
