From what I can tell chimichangas are basically fried burritos, which doesn’t sound like the sort of healthy meal I should be cooking. So when I came across this makeover recipe I was intrigued. There’s nothing too surprising: reduced fat cheese, fry using cooking spray rather than shallow frying.
I then decided to check out some other recipes for ideas on fillings, and at Cook’s Country I found a baked version which sounds a lot easier than trying to fry the chimichangas on every side, plus the filling sounds both simpler and better. So I’m going to go with this recipe, and use reduced fat cheese.
Se we make our tortillas with wholemeal flour, cook the rice, roast a couple of chicken breasts, dice all the veg, and mise en place, we fry everything up.
We then portion out into the tortillas.
Then it’s into a hot baking dish. The messed up one was the first tortilla we fried, and it went rather brittle…
Ten minutes later and we add homemade guacamole, sour cream, and some leftover dakos topping we added some chillies to.
And yeah: it’s amazing. Smoky & spicy loveliness.
