Soph made her weeknight turkey pilaf this week, and it turns out we’ve already got some in the freezer… so we really need to use up these extras rather than freezing them. Instead of going for the obvious burritos I’m going to do arancini, which are breaded rice balls that are normally deep fried, but I’m going to bake based on this recipe.
- Leftover turkey pilaf
- Parmesan
- 2 egg, beaten
- Mozzarella
- Flour
- Egg, beaten
- Panko
Mix the pilaf with one of the beaten eggs and the parmesan. Make 12 small balls of mozzarella, and cover in the pilaf mix and make into balls. Roll the balls in flour, then in the other beaten egg, then the panko.
Onto a line baking sheet and cook at 180C fan for 30 minutes, until the panko starts to brown.
As they’re already pretty much a meal on their own, we’ll serve with a simple salad.
Nice… but not worth the effort. Just reheat the original rather than spend hours doing these.
