The latest Baked and Delicious magazines have arrived, and I’m doing a log-shaped almond cookie for them for my weekly work bakes.
- 175g unsalted butter
- 75g caster sugar
- 175g plain flour
- 1/2 tsp bicarbonate of soda
- 125g ground almonds
- 1/2 tsp vanilla extract
Mix the dry ingredients. Cream butter & sugar, then beat in vanilla extract. Mix in the dry ingredients.
Split into 30g balls, and form each into a log shape. Chill on baking sheets while the oven heats to 150C fan.
Bake for 20 minutes, turning half way through. Cool on a wire rack.
Huh. Despite chilling, which wasn’t in the recipe, they spread and turned into ovals. Hardly what was advertised! I wonder where I went wrong?
Anyway…
Decorate with water icing. I’m going to use a squeezy bottle to do this, and make an effort to make it neat for a change!
Well I’m happy with the icing, and the taste… I just wish I knew why they didn’t stay as logs like the magazine showed.
