Halloumi is a strange cheese. Cheese, as a rule, melts. It also doesn’t squeak when you eat it. Not so halloumi!
This BBC Good Food recipe takes advantage of the lack of melting to fry up the halloumi and give it some colour. It’s then served on a bed of spiced chickpeas. However they’ve done the spices wrong: where’s the Garlic? Where’s the cumin and coriander!? I shall have to add those myself.
And… it was really good, but next time I’d add more garlic, coriander and cumin :)
