Aubergine Rolls with Spinach and Ricotta

Last weekend was all about American food. This weekend we’re going European, and hopefully lower calorie and better nutrients! So it’s aubergine rolls with spinach and ricotta.

The aubergines get roasted wit lots of spices, spinach gets blanched and mixed with ricotta and nutmeg, passata gets herbs and garlic added. The the spinach mix goes on the aubergines.

These get rolled up and covered in the passata mix, and topped with cheese and sourdough breadcrumbs.

And there you go: turns out to be very easy!
