Friday night fish night and it’s another recipe from Cook’s Illustrated.
Succotash sounds exotic, but it’s just a bed of beans! The cornmeal fried fish does sound interesting. However chips seems like they’re in order, so I’m adding some oven-baked potato wedges (frying chips is too much hassle and ruins any pretence at this being a healthy meal).
So with the wedges in the oven nearly cooked, frying fish and succotash starts.
And erm… that’s it!
Mmmm it’s a slightly less unhealthy fish’n’chips!
Next time: let the flour/corn mix steep in the fish overnight in the fridge to form a batter.
