Soph’s training run today was 20 miles! So it’s a double-sized post-run meal, using up both sourdough courgette fritters and quesadillas that got frozen, complete with our favourite avocado and toasted almond side.
It starts with bacon & mushrooms getting fried up for the quesadillas.
Then the avocado thing is made, and everything else mise en place.
The fritters go in the oven while the tortillas go on the hob to melt the cheese, then it’s time to eat!
Delicious, and things seems to have survived freezing pretty well, which is good to know.
