The frozen apple I took out of the freezer last night happened to have blueberries mixed in, so today’s pudding is apple & blueberry pie.
I’m topping with a rough puff pastry, which is dead easy to make as you don’t even have to rub the butter into the flour!
OK it does require some rolling and folding, but that’s pretty easy if you give it a good rest in the fridge between folds.
Roll out, put on top of fruit, egg wash and demerara sugar…
Then, erm… how to bake? As it’s just heating up and pastry, I’ll start with 20 minutes at 180C fan and see how it goes…
It was OK after 20, but a couple of extra five minutes and at the 30 minute mark it looked perfect.
Then it’s crème fraîche and eat!
Well… of course “mmm” – it’s apple pie!
Generous, healthy filling for this pie.
