Winter’s on the wain, so time for one last warming stew, complete with dumplings.
However it’s not your standard British stew I’m planning, it’s a Brazilian one that featured in the BBC Good Food magazine.
I’d like to claim I’ve chosen it because I wanted to explore the culinary heritage of Brazil… but actually it was because it’s got multiple types of pork in it, and it has corn dumplings!
Whatever my reasons for choosing it, it should be a good recovery meal for Soph after her half marathon today.
So, pork #1: pork shoulder.
Pork #2: cooking chorizo.
Pork #3: bacon medallions.
Then onions & celery.
Tomatoes, stock cube, chillies, spices, etc.
An hour later sweet potato, black beans and red peppers go in.
Meanwhile an onion salad is made.
And dumplings are prepped.
Later on they’re popped on top of the stew.
And baked.
And eated.
WOW! So much flavour here. Technically it’s just our normal stew with allspice replacing garlic, but this tastes amazing. The triumvirate of pork clearly works!
