Borough Market has an interesting recipe for breakfast pie, which is basically a full English breakfast inside a pie!
Taking inspiration from that recipe I’m going to do a hot water crust pie in a loaf mould similar to a pie I’ve done before.
So I make up the pastry, fry up the mushrooms, and generally get mise en place.
This time I’m lining the load tray with lots of foil, rather than the baking parchment that fell apart last time.
30 minutes at 180C fan, then an hour at 160C fan, and it’s looking good.
After it’s cooled it’s into the fridge ready for breakfast tomorrow.
It came out of the foil covering with ease: so it’s definitely foil not parchment paper in the future.
It cut open pretty easily and looks good inside!
Actually it looks like a rather grumpy guy with a monobrow now I look at the picture!
Anyway: serve with beans.
A great breakfast. Not entirely unhealthy, except for the fact that there’s still three quarters of the pie in the fridge that will probably get eaten during the day!
