Stir Fry-day has run its course, so it’s time for Friday Pie Day! Starting with Chicken & Chorizo puff pastry pie, roughly following this BBC Good Food recipe.
I used to object to pies that only had a top, but these days I’m excited to get to make some puff pastry, well rough puff anyway. I’ll be using the recipe from Leith’s Baking Bible p60. Compared to proper puff it’s a doddle: cut up cool but piable butter into 1cm cubes, mix with flour and water, then roll and letter-fold four times.
As for the pie… it’s not a quick pie! Starts with browning the chicken thighs.
Then soften onions, add chorizo, and deglaze the fond with dry sherry
Then stock and add the chicken and simmer for 40 minutes…
Then shred chicken, mix cream into the sauce, and assemble the pie. Most important here: make sure your Pac-Man is aligned with your ghosts.
Bake at 180C fan for 45 minutes, and check to see if your Pac-Man is still visible.
We’re having it with mash (from our own potatoes) and cabbage (from our own… Tesco’s :).
It’s a fine looking pie. The filling is healthy but not sure the pastry is. Still you’ll soon cycle/run off those calories.
