For lunch I’m doing fresh pasta using up what’s in the fridge, hence frigorifero tagliatelle, which Google Translate tells me is Italian for fridge pasta.
In the fridge I have baby spinach leaves, bacon, chillies and creme fraiche, which all sound like they’d work together.
According to this Smitten Kitchen recipe it seems pretty straightforward to put the spinach in the pasta itself, which sounds fun to try, so I’m going to do that. Basically wash the baby spinach, wilt in a frying pan while still wet from washing.
Thoroughly dry it out in some muslin, then pulse with the flour in the food processor before incorporating the egg.
For the sauce I’ll try up the bacon with onion, garlic & chillies, and add the creme fraiche shortly before adding the fresh pasta.
And here we go!
As expected… due to garlic, bacon, pasta, etc, it was delicious. However it’s a very fussy way to make garlic, bacon pasta. Great for learning how to cook, not an efficient way to cook dinner :)
You’re very patient with these involved recipes – I wouldn’t be bothered but then I don’t get the delicious meals you serve.
