Continuing the theme of trying to use up that huge bag of semolina, this week’s bake for my work colleagues will be Dan lepard’s semolina date bars. Nothing particularly complicated, and I’m not veering from his recipe, so I won’t bother repeating it here.
I will however mention how weird the pastry is. Melted butter, leave at room temperature!? This is not normal! But I’m going to diligently follow the recipe…
Food processing the date mix is much easier and less washing up than does for my fig rolls…
Then we come to rolling out and filling. I ended up making twice the amount given in the recipe :S How did they get it do short and stumpy!?
Also how did they get the sesame seeds to stick? I ended up using an egg white wash.
And as I said… I made more than the 16 total they say this makes!
Also I chilled before baking. And… it seemed to work!
They taste great! The filling is a little loose.. so egg white washing that is probably called for there too. But.. mmm :)
