Leftover mashed potato isn’t a thing in this house, so we don’t get to make things from mash very often. But this morning I’m deliberately making mash so I can make potato scones.
With mash and avocado mix thing made, it’s all just about timing. It starts well…
But when I put the eggs in I turned down the scones, so they didn’t really firm up properly :(
Not much I can do about that, as I don’t want to over-poach the eggs and not have a runny yolk!
So more of re-heated mashed potato than scones… but it still all tasted delicious!
