Every Friday I rummage through the fridge and throw out anything that’s gone off. There wasn’t anything this week, but there was an excess of Soph’s lemon curd and some blueberries that if I didn’t do anything with them they’d probably end up being thrown out next week.
As it happens Cook’s Illustrated has a recipe for lemon & blueberry muffins. I didn’t have enough yogurt, but the lemon curd I added made up the weight. I skipped the lemon zest as I already had the lemon curd, and I added some poppy seeds as they’re always nice with lemon.
