Well it’s January, and the kilos put on over xmas, birthday and new year need to come off again, so it’s time to turn to lower calorie weekend meals.
However we still want to eat pie!
So it’s a courgette and chickpea filo from p93 of Nigella’s How to be a Domestic Goddess.
Basically you make a courgette & chickpea risotto, and wrap this in filo in springform pan and bake it. Sounds yum!
So mise en place…
Salt the courgettes.
Removing lots of liquid.
Fry onions, garlic, spices, then add courgettes.
Add stock risotto stylie.
Line springform pan with filo and butter.
Add filling.
Top and bake.
Pie!
Remove springform.
Pie!
Wow. We did our normal thing of putting a reasonable mount of food on the plate for photos, expecting to eat more later: off camera. But this quarter pie really filled us up, and was really tasty!
Not only is this a great pie, but filo pie in general is clearly a low-cal thing to do with leftovers that will be really satisfying.
I’ve never had filo pastry so I might give this a try. I’ll buy the filo to save messing about with normal pastry.
