I’m only blogging this due to finding the recipe in a Google Newspaper search result.
However that’s using a bought waffle mix! No no no… I’ll be using my sourdough cinnamon waffle recipe, plus about a cup of mincemeat added to the batter.
They cooked quicker than regular waffles, probably due to the higher sugar and alcohol content in the mincemeat, but we caught it before it got too cajun blackened.
The taste was… odd. You don’t expect boozy mincemeat in a waffle, but once you get over the shock it’s rather good – especially with the salted caramel sauce and banana ice cream we topped it with!
