Breakfast strata is, as far as I can tell, savory bread & butter pudding. Another great American invention to eat pudding for breakfast!
This started out as an idea to make overnight in the slow cooker, so we could wake up to breakfast already cooked for us. ATK’s Slow Cooker book has a recipe for it, but when I read the details I found you had to cook it for exactly four hours in the slow cooker, any more and it goes to mush. As we plan on sleeping for more than four hours, that’s no good!
Thankfully their regular breakfast strata is pretty good for cooking in time for breakfast as it’s prepared the night before and put in the fridge overnight to be cooked in the morning.
Obviously it’s supposed to be stale bread for this sort of thing… but we don’t do daily bread, so I made a loaf and toasted it in the oven, then buttered it.
Then we fry up sausage meat, bacon, various breakfast veg… then layer it up.
And this goes in the fridge overnight.
In the morning it’s into a 140C fan oven for 50 minutes.
Then after a few minutes resting we serve up.
As it’s all good breakfasty things; eggs, sausage, bacon, onion, cheese; it’s no surprise it’s good, but it’s actually better than that, more than the sum of its parts and all that.
Not only does it taste great but it’s so easy to make in the morning, because all the prep is done the night before. Definitely one we’ll be doing again.
