Mole, as in the Mexican stew we made a couple of weeks ago. It’s in the freezer, and will make a quick pie filling that only needs defrosting.
I’ll make rough puff pastry the night before, so all I’ll need to do on the night it roll it out and bake the pie.
I’m trying to use a lattice roller for the first time with this pastry lid.
But it looks like I need more practice. It wouldn’t spread out at all, clearly more preassue is needed. So I had to poke some hole manually.
Anyway it didn’t look to bad going in.
And pretty good coming out.
It doesn’t really need anything with it as the mole has veg and potatoes, but I’m going to do some baby spinach with because
it’s a good healthy addition we’ve got some in the garden that needs using.
I think the pastry could have done with a little longer… and the filling for that matter. But still… a great way to use up leftover mole!
