Soph has a request from her sister for some of her lemon curd, so as she’s making some I’m going to grab some to make a lemon curd version of jammie dodgers. A quick search on the internet gave me this slightly unusual recipe, and I like unusual, so I’m going with it!
- 200g ground almonds
- 1 tbsp arrowroot powder
- ¼ tsp baking soda
- ¼ tsp salt
- 60ml coconut oil, melted
- 60ml maple syrup
- 1 tsp vanilla extract
- Zest of 1 lemon
Mix ground almonds, arrowroot, baking soda & salt. Melt coconut oil, maple syrup, vanilla extract & lemon zest on the hob. Working out 60ml of solid coconut oil is tricky… so I just used what was left in the jar, which was turned out to be way more than 60ml, so I poured some off after melting. Mix everything together to form a dough, and chill. In the freezer in the end. Roll out the dough and cut out biscuits. Not easy… ended up doing it under cling film. Half should be full biscuits, half with the middles cut out, for the dodger look. Chill before baking. Oven to 160C fan while they chill. Bake for 10 minutes, turning & swapping over half way through. Cool on a rack.
Once cooled, sandwich together with lemon curd.
The texture of the biscuit is surprisingly chewy, which is very similar to commercial jammie dodgers. And of course they taste great with Soph’s lemon curd in the middle!
