To offset the less healthy bakes from this weekend, like my Yum Yums and Soph’s Black Forest Cupcakes, Soph’s making one of her healthy lunch specials: a healthier than thou quiche. Not only does it contain most of your 5-a-day veg in a single slice, and uses quark for cheese which has next to no calories, it doesn’t even have pastry: it uses a mix of lentils and oats for the case!
