Irish Potato Cake Fry-Up

St Patrick’s day is often used as an excuse to overindulge, and we’re going to join in that tradition by doing Irish potato cakes… as part of a full Irish breakfast!

We’re going with the BBC Good Food recipe for potato cakes:

  • 500g mashed potato
  • 150g flour
  • 2 tsp baking powder
  • 4 eggs
  • 250ml milk

Mix everything together (we ended up using the electric hand whisk to get the mash fully incorporated) and fry!

    1. Actually I was in green as I was in my gardening gear. I’m not a fan of Guinness, but I might have an Irish whiskey around somewhere…
