St Patrick’s day is often used as an excuse to overindulge, and we’re going to join in that tradition by doing Irish potato cakes… as part of a full Irish breakfast!
We’re going with the BBC Good Food recipe for potato cakes:
- 500g mashed potato
- 150g flour
- 2 tsp baking powder
- 4 eggs
- 250ml milk
Mix everything together (we ended up using the electric hand whisk to get the mash fully incorporated) and fry!
And as the adverts used to say: enjoy as part of your complete breakfast!
A lovely treat for St Patrick’s Day. Hope you were a’wearin’ of the green at breakfast time. You can have the Guinness tonight.

Actually I was in green as I was in my gardening gear. I’m not a fan of Guinness, but I might have an Irish whiskey around somewhere…
