We’re off to visit my mum this weekend, and rather than force her to cook for us, we’re going to turn up with food! On the Friday we’ll slow-cook a pork pibil, as we’ve done before, then take it down with us on the train when we visit on the Saturday. I’ll get my brother to pick up the extras we’ll need, then we can warm things up and serve. We’ll serve with green rice, pink onions, plus store bought guacamole & flour tortillas.
Last time we made this we couldn’t find anchiote paste, so we made our own substitute. Hoping to find the real thing I popped to Borough Market during my lunch break. The Mexican stall wasn’t there (maybe it’s only there on a Friday?) but once again Spice Mountain had what I was looking for, or nearly anyway as they had ground anchiote! Given the fake paste we made last time had about 5 tbsp of spice in… I’m just going to use the entire pot mixed with 2 tbsps of white wine vinegar to make the paste.
So toast spices, mash the marinade in the food processor and add orange juice. Then cut up meat and marinade overnight in the fridge.
After cooking it gets shredded. Mmm pork…
And the family enjoyed it :) And I’ve convinced my brother to dig out his slow cooker and try pulled pork!
