This week I’m experimenting on my work colleagues. I love this idea for chili, lime, courgette choc chip cookies, so I’m just converting to metric and giving it a go.
For the cookies:
- 300g plain (AP) flour
- 1 tsp bicarbonate of soda (baking soda)
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 225g room temperature butter
- 200g golden caster sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup grated, drained courgette
- 1 scotch bonnet (habanero), seeded and finely chopped
- 1 tsp lime zest
- 1 tbsp lime juice
- 200g choc chips
Cream butter and sugar, beat in eggs, lime juice & vanilla, mix in courgette, lime zest & chili, then the dry ingredients, and finally choc chips. Portion out 2 tbsp scoops onto lined baking sheets.
Bake at 180C fan for 12 minutes, turning half way through.
Lime glaze:
- 250g icing suagr
- 1-2 tbsp lime juice
- 1 tbsp lime zest
I’m making this pretty thick as I need to transport these cookies to work.
Clearly I need to get better at glazing…
They are very much more cake than cookie (cakies?) despite the colouring on the edges. I guess that’s the courgette. However they are delicious! For our tastes they need more spice, maybe another chilli, but for taking to work they’re perfect.
