A spicy one-pot with sausage, chicken and prawns? Yes please!
We basing this on ATK’s Comfort Food Makeovers Gumbo (p80), but cutting down to serve two and cooking the rice in the pot rather than dirtying another pan:
- 2 tbsp flour
- 4 small cooking chorizo
- 1 onion, chopped fine
- 1 green bell pepper, chopped fine
- 1 celery rib, minced
- 5 garlic cloves, minced
- 1 teaspoon minced fresh thyme
- 1/2 teaspoon cayenne pepper
- 2 tbsp Creole spice
- 200g brown basmati rice
- 1 litre chicken stock
- 1 can chopped tomatoes
- 2 tablespoons fish sauce
- chicken breasts, skin removed, trimmed
- prawns
- okra
Toast the flour in the casserole for 7+ minutes until it turns light brown. Set aside. Fry onions, pepper, celery & sausage. Add flour, garlic, spices & thyme.
Add chicken stock, tomatoes & fish sauce. Add rice, chicken breasts & simmer for 25 minutes until chicken is 71C in the centre (ahem… they were 85C after 20mins…).
Remove the chicken, let it cool a bit, then shred. Add chicken back along with prawns & okra and simmer until prawns are cooked.
It’s cold and windy and wet here in the UK, and this was the perfect meal for tonight. What I don’t understand is why the southern US, with their warm weather, would come up with such a perfect winter one-pot!
