We’ve had a pretty healthy week here, with lots of exercise and lots of healthy food. That’s left us both wanting to bake treats, and we’ve both got our excuses. Mine is that the mincemeat from Christmas needs using up :)
So I’m making my old school’s shortcake with a layer of mincemeat in the middle. Except there wasn’t enough for the whole tray, so I found some strawberry jam in the fridge and used that for the other half.
I then topped the mincemeat side with demerara sugar, and the jam side with desiccated coconut.
I let it have a few extra minutes in the oven to brown off the coconut.
So that’s pudding done! Now as soon as our weekly food order arrives we can get on to making dinner!
