Slow Cooker BBQ Ribs

Slow cooking ribs until the meat is all falling off, then grilling the outside crispy sound delicious. it comes with a calorie drawback of course… as does anything with lots of fat and sugar. But as I’ve got the new slow cooker it’s what I’m doing! Once again this recipe is based on America’s Test Kitchen, in this case their Slow Cooker Revolution book.

Things start with a BBQ sauce:

  • 1 /12 cups ketchup sauce
  • 1/2 cup hot tomato ketchup
  • 1 small can chipotles in adobo sauce
  • 3/4 cup molasses
  • 3 tbsp cider vinegar
  • 1 tbsp hot pepper sauce
  • 1 tbsp Worcestershire sauce
  •  1 tsp liquid smoke
  • salt & pepper
  • 1 pinch chilli flakes

The chipotles get roughly chopped, and everything mixed together. Oh and the hot ketchup is only there because I ran out of the regular stuff!

The ribs get rubbed in a sweet paprika mix:

  • 3 tbsp sweet paprika
  • 2 tbsp light brown soft sugar
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp pepper

The ribs then go vertically in the slow cooker, and have the BBQ sauce poured over.

They then cook for 7 hours on low.

The ribs come out and go in a baking sheet lined with foil and covered up.

IMG_1281The sauce then goes on the hob for about 15 minutes to reduce.

Once the sauce has reduced the ribs get brush with the sauce, then go under the grill: a couple of minutes bone side up, then 10 minutes meat side up, getting brushed a few times.

It then gets served with sweet potato wedges and corn on the cob.

This turned out really well. The pork just fell off the ribs, and the sauce was sweet, sticky, spicy and smoky!

Not a meal to be had too often, due to the calories involved, but certainly worth spending some calories on every now and again!

BBQ Sauce

  • 1 /12 cups ketchup sauce

  • 3/4 cup molasses
  • 3 tbsp cider vinegar
  • 1 tbsp hot pepper sauce
  • 1 tbsp Worcestershire sauce
  •  1 tsp liquid smoke
  • salt & pepper
  • 1 pinch chilli flakes

Ribs:

  • 1kg pork rack ribs
  • 3 tbsp sweet paprika
  • 2 tbsp light brown soft sugar
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp pepper

Mix sugar & spices, and rub over ribs.

Put the ribs vertically in the slow cooker, cover with sauce, and cook for 7 hours on slow.

Remove ribs and cover with foil. Reduce sauce on the hob for 15 minutes. Brush ribs with sauce and grill (broil) bone side up for 2 minutes, then turn and grill for 10 minutes brushing every few minutes.

We served with sweet potato wedges and corn on the cob.

  1. I was about to query “liquid smoke” but find it’s been explained. Thank you.
    These ribs are worth spending calories on – bike ride or long walk afterwards would compensate.
